The Benson Hotel and Faculty Club in Aurora, located at the esteemed University of Colorado Anschutz Medical Campus, is thrilled to announce the opening of The Common Good, a vibrant restaurant that aims to become a notable destination in the Greater Denver food scene. With a design collaboration between Tryba Architects and Avenue Interior Design, The Common Good celebrates the pioneering spirit of the West, offering a welcoming space for breakfast, lunch, and dinner.
Designed as a community gathering place in a rapidly evolving city known as Colorado’s biotech hub and a health and life sciences research center, the 100-seat restaurant features an open kitchen, ample booth seating, expansive windows that bathe the space in natural light, and a wraparound outdoor terrace for delightful alfresco dining. Adorned with warm mahogany wood, brass accents, and rich teal paneled walls, the separate Lounge offers a cozy retreat for guests.
At the helm of The Common Good is Executive Chef Donovan Davis, who brings his passion for cooking and years of culinary expertise to the table. Chef Davis discovered his love for the culinary arts as a teenager and has since honed his skills in renowned establishments such as the Monterey Peninsula Country Club, Denver Castle Pines Country Club, Four Seasons Hotel Austin, and Four Seasons Hotel Chicago.
“We are excited to be open for the community now,” shares Chef Davis. “The Common Good offers an approachable, communal environment with shared small plate options, providing a place where friends, colleagues, and the community can come together.”
Emphasizing locally-sourced ingredients, Chef Davis aims to showcase the bounty of Colorado through seasonally-driven comfort food. He focuses on working with producers within a 10-mile radius, prioritizing high-quality ingredients, anti-inflammatory products, Superfoods, and healthy eating. The menu reflects a global culinary approach with flavors inspired by Morocco, Thailand, Japan, and the American Southwest.
Chef Davis highlights standout dishes like the 24-hour braised Short Rib with Plum Sauce, which he describes as a “wow” piece when it arrives at the table. Other tantalizing options include beets roasted with vanilla and served with in-house smoked goat cheese, freshly made pasta, and a variety of vegan dishes such as the Vegan Thai Green Curry, which features French Red Rice cooked using the “Charleston ice cream method” to achieve a perfectly al dente texture.
The Lounge area exudes a handsome ambiance and offers the perfect spot to enjoy sports on TV screens while savoring delectable bites like Gin Olives, Mushroom Sliders, Burgers, Mac & Cheese, and irresistible Pistachio Parmesan Fries.
